These 5-ingredient keto breakfast pockets are filled with ham and melty cheese. They're easy to prepare, nut-free, grain-free and egg-free and can be prepared in under 30 minutes.

Just like my Keto Spanakopita, this recipe is adapted from Keto Morning Hot Pockets which went viral over the social media. If you can eat nuts, you can follow the original recipe that is made with almond flour - you will only need 4 ingredients: shredded mozzarella, almond flour, ham and cheese - that's it!

It depends where you live - I got this one in the UK. Here's a link to Amazon.com: Amazon link It looks similar but I don't think it's the same. Both will work though!

My hotpocket came out perfect!  Instead of cream cheese, I used Sheeps yogurt. And instead of the Mozzeerella Cheese I used Sheep's Cheese because my current diet calls for no cows dairy. And since it was breakfast time, I replaced the ham with Scrambled eggs. So it was a breakfast pocket instead. It was delicious and the crust was golden brown and crunchy. I stared at the ingredients for half an hour b4 I made it bc I couldn't fathom how those 3 ingredients could make a crust. But the crust was the best part. Crunchy and perfect. Weeey better than a store bought frozen hotpoclet. Hands down! 6 stars!

Awww thank you so much for your kind words ❤ It's good to know that sheep cheese works instead of mozzarella!

Brilliant idea. My plan has same restrictions. What kind of sheep cheese did you use? Was it grated pecorino-Romano or a creamy sheep cheese spread type?

Martina @ KetoDiet 5 years ago # Reply
11/26/2019 10:31:08 PM

I think that a pecorino Romano type of cheese would be too hard and dry and the spreadable cheese won't work because it's too moist and won't provide the elasticity the dough needs. I think you'll have use hard cheese that has emmental-like texture.

Thank you Trish! Yes these can both be frozen and then reheated in the oven. I hope you enjoy!

SLS 5 years ago # Reply

Just to clarify, Martine, the freezing was done before the pockets were cooked or after?  You said "reheated", which means to me that it would be after, but someone used the same term on another blog and they actually meant that I should freeze the item before cooking.  Either way, this recipe may be an answer to prayer.

Martina @ KetoDiet 5 years ago # Reply
9/18/2019 9:49:20 PM

I do think that both will work but I do mean "after" here. I think you could even freeze the uncooked pockets and then bake them for a little longer.

I didn't have the meal, just regular flax seed.   Put it in my food processor for about 3 minutes didn't do anything.  That being said,  it still turned out delicious!!!!  Quick and easy to make.  Recipe is a keeper!

Thank you for sharing! Then only issue with coconut flour is that it is very absorbent so you may need to add extra moisture - one tablespoon of cream cheese is a good option 😊

Would it be possible to make a sweet version of this? Add cacao and stevia to the dough and fill with low-carb chia jam and cream? I saw that it's important to keep the moisture low so maybe that isn't possible?

I made the Ham and Cheese version today and it was delicious and filling! My husband is now trying to eat low-carb and he said “this is a keeper”. We shared it, and neither of us have been hungry all day. My only mistake was that I should have left it on the parchment paper, when I transferred it to the baking sheet...it badly stuck to the sheet. Lesson learned.

Dear Martina,
I really like this recipe but I have some troubles with "dough". This amount of mozzarella, cream cheese and flaxmeal isn't enough to make large enough dough to put cheese and ham and to close it like you do. What is the trick, please help.?

Could it be that the ham and cheese slices are bigger? You can always double the dough but don't forget to reflect that in the nutrition facts 😊

Hi Joe, I tried almond flour, coconut flour and flaxmeal but not ground chia seeds. I think that should work too tough! Each ingredient is different (more or less absorbent) and the amounts will need to be adjusted.

Hi, it looked so yummy that i tried it this morning.  I substituted the shredded mozzarella with a mozzarella ball instead - and when making the dough, it was extremely sticky and difficult to roll.. pardon my ignorance, but isn't the same? The shredded mozzarella that i came across in the super markets seem to have potato starch in them 😞 suggestions.. help, please!

Martina @ KetoDiet 7 years ago # Reply
9/28/2017 9:21:31 PM

Hi Jaime, I'm sorry for the delayed response. Mozzarella ball (fresh mozzarella) is too moist and won't work in this recipe. You'll need the pizza-style low-moist shredded mozzarella that is stretchy when melted. Most shredded mozzarella products do indeed contain potato starch to avoid clumping - apart from a few products that you can buy as a whole block (not shredded). Here is a recipe in which I used one without potato starch: Fat Head Pizza with Pepperoni & Jalapeños
As you can see in the video, it's still quite moist/sticky. The ones with potato starch work best in this recipe and I often use it in recipes with mozzarella dough. The amount of carbs from potato starch is insignificant.

You can try to melt the cheese with the cream cheese in a sauce pan (use low heat). I haven't tried it and you may need to add a little more cream cheese or cream (1 tablespoon) if it gets dry.

These were so good! I did have to remake the "dough" because it wouldn't roll out without cracking. The second time I ground my flaxseed (Bob's Red Mill Organic Whole Ground Flaxseed Meal) in a coffee grinder to make it really fine. I also added some butter to the dough before cooking. Even my picky husband love it. Not sure why, but my net carbs on this recipe were 8 g and 575 calories.

Hi, what can I use instead of Provolone cheese? I live in France so ideally french cheese.
Thanks

Any cheese will work but stringy cheese like mozzarella (low moisture type) or provolone is best. You can use cheddar, gruyere, manchego or fresh mozzarella.

Hi, is flax meal just flax seeds grinded down to a powder?

Yes, that's what it is 😊 I make my own (you can use a coffee grinder).

OMG this looks so amazing.  I will try it out and leave a comment.  I've ordered your 30 Day Keto Cleanse book.  It's arriving tomorrow.  Can't wait to read it.  Saw your interview with Andreas from DietDoctor.com.  Fascinating.  You're doing great work!  Thank you.

Hi Cheryl, I think you're referring to Maria's recipes and her work - these are my books: www.amazon.co.uk/.../ref=dp_byline_cont_book_1 😊

Hi Martina
Is this exclusively a dairy based recipe or are there alternatives to the cheese?

Thank you Emma! Yes, this dough will work too and it's dairy-free 😊 The Best Low-Carb & Keto Tortillas, Taco Shells & Nachos
